a new recipe: Red Quinoa-Avocado Salad

The local farmers will be opening their market in Belmont this coming Saturday which marks the point that we begin eating more locally (not buying produce from the grocery store while the farmers are selling their goods at the markets and road-side stands). So this last trip for produce from the grocery store included the purchase of some very special treats…avocados.

We had some red quinoa, frozen corn, a cilantro plant, and green onions, so we only needed to add some tomatoes and a lemon to our grocery list to make Red-Quinoa-Avacado Salad. Hahaha…for those of you who know me, yes, I used to hate cilantro (thought it tasted like soap)… but then I discovered that if you harvest it yourself it is an amazing addition to many meals we enjoy as a family.

We found this simple recipe and all four of us enjoyed it last night with a few tortilla chips and plan to make cornbread to accompany the leftovers tonight.

1       cup red quinoa (cooked and chilled)
1       quart frozen sweet corn
1/2   cup finely chopped fresh cilantro
1       cup green onions, thinly sliced
2      vine-ripened firm tomatoes, diced (about 1 cup)
2      avocados, peeled, pitted, cubed small
Lemon Vinaigrette…whisk together:
         1/2 c. olive oil, 3 tbsp. freshly squeezed lemon juice,
         1 minced shallot, 1 1/2 tsp. dijon mustard, 1/2 tsp. sugar
Gently mix all of these beautiful ingredients together
salt and pepper to taste
 

Spoon into a bowl and enjoy this refreshing, fulfilling, and  healthy treat!

PS… My 6 year old picky(ish) eater asked for and ate a second helping! Let me know if you try it!
